i am using only a portion of the packet at a time so i fold it tightly and store in a small sealed jar. it still gets hard. i guess a little silica would help it maintain its powder state

Really great flavor! It's a fine powder which mixes instantly and stays in solution. If you like to make your own miso soup, this is a delightful flavor enhancement. I mix one packet with about 2 tablespoons of miso paste, using the Kotobuki Misokoshi Miso Soup Strainer Set and Tzum Essen organic white miso paste, both sold here on Amazon. A few cubes of tofu make this an amazing breakfast and very soothing.
